Tuna Salad with Apples

As a pescatarian, I don't have many choices when it comes to sandwiches. That's why I really appreciate a good tuna salad. Not too fishy, not too bland, not too runny, but not too dry. I like to keep it simple. Enter my tuna salad; moistened with plain greek yogurt, a dollop of mustard and a splash of lemon, with scallion, celery, and sweet, crisp apple folded in, and finally seasoned with just salt and pepper. Delectable. So good that most of the time I don't even eat it in a sandwich, just straight up! 

Tuna Salad with Apples

Ingredients
1 5oz can of tuna
1/2 cup of scallions (thinly sliced)
1/2 cup of celery (chopped)
3/4 cup of diced apples
1/2 cup of plain greek yogurt
1/2 tbs of mustard
1/2 tbs of fresh lemon juice
salt and pepper

Directions

  1. Drain tuna and flake into a bowl.
  2. Add greek yogurt, mustard, lemon juice, and mix well.
  3. Stir in scallions, celery, and apples.
  4. Season to taste with salt and pepper.

Serves 2.
